Cookery through the Ages

The course starts with an overall timeline of the major changes in food technology and sources, looks at the various forms of evidence available to us and how they can be interpreted, then studies a few periods in depth: Roman, medieval, Tudor, and Victorian. On the way we will study some specific foods such as sugar, how the really spectacular feast items were produced, and how to “cheat”, using a cheap ingredient to imitate something much more expensive. Students may also request specific topics related to their own interests, which will be accommodated if possible.

Course aim

To discover the changes in cookery from ancient times to the last century, with an emphasis on British history.

Do I need any particular skills or experience?

  • No skills or experience needed
  • This course is suitable for beginners and improvers

By the end of the course I should be able to:

  • Have an overall understanding of what ingredients are possible in each era
  • Understand when, and why, you should “lete none otemele come there yne”
  • Refrain from putting four and twenty blackbirds in a pie, despite knowing how to do so
  • Have a healthy distrust of modern interpretations of historical recipes

How will I be taught?

  • The WEA tutor will use a range of different teaching and learning methods and encourage you and the group to be actively involved in your learning

What kind of feedback can I expect?

  • A range of informal activities will be used by the tutor to see what you are learning which may include quizzes, question and answer, small projects and discussion
  • You will have opportunities to discuss your progress with your tutor

What else do I need to know?

  • It would be helpful if you had access to the internet (Mobile phone, tablet or computer at home or through a library etc.)
