Nutrition and Health: Science, Food and Marketing

The study of human nutrition includes aspects of biology, medicine, sociology, economics and more. The intention is to provide information and insights that will help students navigate the nutrition maze. Students will be introduced to the basics of nutrition science and the methods used to investigate the relationship between what we eat and our health. It will discuss how food manufacturers, government and the media respond to developments in nutrition science and how nutrition related related health messages are devised, regulated and delivered. The course will help students to understand better and to evaluate critically the information and advice concerning nutrition, food and health that they may see or receive in their every-day lives.
