All food concepts have started with a winning recipe or a hero dish that defines them as food producers. McDonald's has its big Mac, Burger King has its whopper, millions of UK residents eat Harry Ramsdens fish and chips a business that started in an old wooden shed and grew into a huge company. Budding food entrepreneurs should always be encouraged by the fact that at some point someone has managed to make a successful business out of selling frogs legs, snails, poisonous blowfish, raw salted fish eggs, jellied eels, and cheeses laced with mould. Taking a hero recipe that wows guests every time to the retail market can be a daunting prospect. Levi Roots took a guarded family recipe for a BBQ jerk sauce and has now developed that recipe into a national favourite seen in all the supermarkets. Pataks took favourite family curry recipes and grew them into the Pathak brand which recently sold for £200 million. Are you going to be the next food guru?

Course aim

This taster course aims to teach students how to develop their hero recipe or dish into a sustainable entrepreneurial business. This course will teach students how to work out their recipe's cost price and how to apply a profit margin.

Do I need any particular skills or experience?

  • This course is for beginners and improvers

By the end of the course I should be able to:

  • I will be able to create a recipe sheet, a recipe description, complete a SWOT analysis, create a recipe specification sheet, and identify my core values regarding my hero recipe.
  • I will be able to scale up my hero recipe to a commercial scale and be able to scale up the recipe in regard to food cost and ingredient amounts/yield.
  • I will be able to calculate the cost of the ingredients used in my hero recipe and calculate the cost of producing and serving my hero recipe.
  • I will be able to apply a range of profit margins to my costed recipe and be able to apply the UK-VAT rate to my costed recipe if required.
  • I will know where to find important food safety information and understand my food safety responsibilities as a food producer.

You will need details of your hero recipe or dish. It would be helpful if you knew how to cook your hero recipe. It would be useful to bring a pen/pencil and a mobile phone or personal device to research online.
