International Chef Kevin Ashton will take you through the rules and good practice required in a food operation. The course will cover fridge and freezer storage, temperature requirements, use of cutting boards, safe food handling, personal hygiene, food preparation and storage and the safe storage of chemicals. Demonstrating your knowledge of safe food handling and kitchen hygiene at interview is key to success when looking for volunteering or work opportunities. This short course will fully prepare you to take the Level 2 Food Hygiene exam. You will sit the exam in the last session of the course using your smart phone. Once passed you can print the certificate through the login you will receive. This course is FREE to all. The sessions will be held on Monday 18th July 9.30am-12.30pm, Thursday 21st July 9.30am-12.30pm, Monday 25th July 9.30am-12.30pm, Thursday 28th July 9.30am-1.30pm (the extra hour will be the exam hour).

Course aim

To develop your knowledge of food handling practices and kitchen hygiene, preparing you for employment in hospitality and other sectors including the voluntary sector.

Do I need any particular skills or experience?

  • This course is for beginners

By the end of the course I should be able to:

  • Describe what cross contamination is and how it can occur.
  • Explain why Food Safety temperatures are important and why you need to log them.
  • Explain the importance of Personal Hygiene when working in the food business.
  • Explain what a COSHH cupboard is and 1-2 items that are kept in it.
  • Name 3 types of food that are particularly susceptible to contamination.
